Sweet: The famous carrot cake
This absolutely amazing gluten free, vegan and sugar free carrot cake did I buy at Sattva Bakery in Copenhagen last time I was there. I brought it back to Stockholm and shared it with my stepdad, that’s why it looks so small – cos’ that’s just half of it. This is probably the most delicate carrot cake I’ve ever had. Gonna try to bake one of these one day.
It contains: wholegrain rice flour, carrots, rice sirup, honey, olive oil, dates, raisins, almonds, cardamom, cinnamon and baking soda. All organic!
I think it will taste as good with only honey and some dates, just skip the sirup and raisins. It doesn’t have to be that sweet. I’ll tell you how it goes when I finally take time to bake it!
