Sweet: Baby lemon cupcake

It’s seriously the most clever thing ever – you only get the top of the cake! Less sugar and carbs and more of the real good stuff – like the frosting!! It’s half the price too. Genius idea!

The vanilla cupcake itself is made with brown rice- and chickpea flour and the frosting is mainly coconut milk, coconut oil, lemon and agave. The bun contains a little bit of evaporated cane sugar.. But the woman who worked there said it was so little that it didn’t really count. I happily trusted her ;-)
