Guilt free Green falafel
Something I ate a lot in Santa Teresa was Olam’s wonderful green falafel salad. The falafel was phenomenal! Baked – not fried, and beautiful colored green from the herbs and zucchini. I asked Adi about the recipe and she kindly emailed it to me the other day. So thankful!
400 gr soaked cheakpeas (garbanzo)
Bunch of parsley
Bunch of cilantro
6 clove garlic
You Do: Blend everything in a food processor into a nice paste. Place in the oven and bake until lightly colored brown on the outside.

I haven’t tried this recipe yet, so I don’t know how many falafels you get out from it. I think it’s kind of a big batch though… But whatever, you can never get too many falafels right? ;-)
