Glazed eggplant

Soy- and Mirin glazed eggplant roasted in oven with sesame seeds for about 3 hours.

Served with vegetable broth cooked quinoa and a salad made of fresh lettuce from my grandparents house on the countryside, raw thin sliced zucchini, my dads homemade spicy spice mix and virgin olive oil. Delicious din din!
