Beetroot flavored quinoa lentils

Lentils + cooked quinoa + coconut oil + beet root powder.

Simple.

Healthy.

Filling.

A great protein packed lunch meal can look like this. I had the lentils pre cooked and just mixed half a cup into a bowl with half a cup of fresh from the stove cooked quinoa. Stirred in 1 tbsp coconut oil for healthy fats and 1 tbsp of my beloved beetroot powder for a pretty pink touch and immune boosting vitamin C.

I keep on telling you. Healthy is not hard!!
